Description
Our preferred process of decaffeination is the Swiss Water Process. This is a process developed in Switzerland in 1979, which does not use solvents to decaffeinate the coffee. Instead, the coffee beans are soaked in caffeine-free green coffee extract so that the caffeine is pulled from the bean and drawn into the water. This, however, does not affect the flavour of the coffee. The green coffee extract which has been saturated with the caffeine is then processed through activated charcoal to remove the caffeine rendering it caffeine free again. This same green coffee extract can then be reused to extract caffeine from a new batch of coffee. Once the coffee beans have gone through the decaffeination process, they are then dried to their originating moisture level and re-bagged. The Swiss Water Process results in coffee that is 99.9% caffeine free.
